how can you tell if your head has been skimmed too much?

my head gasket has gone on my car so i need to get the head skimmed etc and change the gasket but how can you tell when it has been skimmed too much?

on the head theres a ledge then it goes into the sloped valve area would say makesure you still have a ledge on the head by the valves, also if it helps my heads been skimmed twice and the block once and its fine
