It sounds like she's just a very shy person to be honest. Especially when you say that you have taken her out a couple of times and she didn't say much. She might feel silly in front of her friends to chat. Some girls are just like that until they really get to know someone.

I would say back off for a bit, don't keep chasing her cause you don't wanna look desperate or scare her off! Then if nothing happens, tell her straight that you like her but can't be dealing with waiting around. So if she likes you enough, then start going out with you more. And tell her if she doesn't like you enoughjh to tell you straight.
