I taped my camera on to the sun visor, left it folded up when passing the scrutineers then pulled the visor down as soon as I got on track! The video turned out pretty good too.

Gorilla pod. Wrap it around the passenger headrest, rollcage, rear view mirror, etc.

I've got a gorilla pod copy tripod, doesn't seem like it would grip too well in corners to be honest!
