daveEP
Its quite quite a big job mate. but not imposible to do if u know your way around the engine. Am sure there should be a wiki on it on here. best to see idrees for a gasket he will point u in the right direction for the best gasket for your setup and can order it straight up for u. ;)
AdamB
Providing you have some mechanical knowledge its fine. Take pics of every stage, keep things in order, label things if you need to. Just stay organised and its a doddle really. The timing is a piece of cake, nothing to worry about, and if you get it wrong it won't do any damage what so ever as they are a non-interference engine. Whats your setup? You'll most likely be fine running a stock gasket. Make sure to get the head skimmed though.
daniel_g
Few tutorials on TGTT to look through http://www.toyotagtturbo.com/forums/showwiki.php?title=Info:Maintenance+and+Repair. If doing a HG i would recommend changing other service parts whilst your at it, mainly waterpump, timing belt kit, headbolts obv.
