Usually they check air filter and replace if need be

Change the spark plugs and check the leads and possibly replace them aswell.

They also change the oil and oil filter

Check brake pads and shoes, replace or clean with brake cleaner if necessary

Check suspension for leaks or damaged bushes etc

Then check water and other fluid levels like brake fluids, screen wash etc

Hope this helps

I may have missed some points out aswell but you get the idea

As my good man Sparky said,

Can also change the fuel filter as well as giving all the turbo oil lines a flush out, flushing youre idle control valve out with carb cleaner, along with the breather lines like the pcv valve

Depends how long it was since the last service and other things too.

I'm pretty sure my car hasn't been serviced for a long time (was owned by an old man who had full service history on it then after he passed it down to his daughter I don't think she had even bothered to lift the bonnet at all).

Soon I'm going to be doing:

Air filter

Spark Plugs

HT leads

Rotor Arm

Distributor Cap

Fuel Filter

Oil filter + oil change

brake pads+shoes

and as tahiti already said, the belts aswell (my fanbelt squeeks sometimes  )
