How should the temp gauge act?

I've just fitted a civic radiator and while doing that I changed the thermostat and coolant.

Before my temp gauge used to move about a lot. If left idling it would creep up to halfway and the fan would come on. When driving it would stay below a quarter of the way and on the motorway it would sometimes drop off the gauge.

Now it takes about 5-10 mins to heat up to just under half way and does not move at all. Is that normal?

When I shut the engine off it cools back down to as it should.

Mine fluctuates a little in the really cold weather with a TD low temp thermostat, they've assured me this is normal though? Maybe you had a low temp thermo?

In my eyes that means it's definitely running too cold, when the stock gauge reaches the mid point things still aren't quite up to temperature (my defi water and oil temp gauges confirm that), running a low temp stat in winter is not a good idea and shouldn't really be needed in summer either!
